======= GREETINGS ======= I trust that everyone had a wonderful Mother's Day celebration last weekend. It is always a great time for families to get together and enjoy each other to celebrate Mum. There just seem to be so much to look forward to in the coming weeks ahead. For one, we have Memorial Day on May 26th, Father's Day on June 15th and the First Day of Summer on June 21st. But we don't need to have special celebrations like these to remind us that each day is special. Make that call that you've been meaning to do, invite a friend/s for tea, throw a tea party for that matter. It always refreshes the soul. This month's newsletter features "Summer sipping with author, Laura Childs". Check out the recipes included in the article. Not only is it easy to make but scrumptious as well! ======================================= SUMMER SIPPING WITH AUTHOR LAURA CHILDS =======================================
As the weather turns warm and blossoms perfume the air, tea lovers just naturally look forward to Garden Teas, Bridal Shower Teas, and moving their tea accouterment out onto a sunny patio or deck. In my Tea Shop Mystery series, my main character, tea shop owner Theodosia Browning, changes her tea drinking habits with each welcome change of seasons. Luckily, there's a wide repertoire of teas that promise an added touch of tranquility for your soft spring days or languid summer afternoons. Keeman (or Keemun), a small-leafed tea grown in China's Anhui Province, has a sweet, mild taste and a lovely orchid bouquet. Lung Ching, also know as Dragon's Well, is a Chinese green tea that delivers a delicate flavor and plenty of sweet top notes. It is also known for its slightly cooling effect. Ti Kuan Yin, an oolong tea from China's Fujian Province, is also known as the Iron Goddess of Mercy, but don't let the tough name fool you. This fragrant amber liquid is very "peachy" and appealing to the palette. Of course, there are also herbal teas and infusions that make for elegant summer sipping. Rose hips, hibiscus, lavender, and chamomile are all highly pleasing. And there are an infinite number of rich black teas that have been blended and flavored with dried orange peel, apple bits, berries, or even flower blossoms. Jasmine is the oldest and most famous of these teas, dating back to the 11th century. But what's a spot of tea without great food to accompany it? Here, for your sublime enjoyment, are a recipe for Buttermilk Scones and Earl Grey Sauce. 1 3/4 cups flour | | 2 tsp. baking powder | 1 Tbsp. sugar | | 6 Tbsp. chilled butter | 1/4 tsp. salt | | 3/4 cup buttermilk | 1/2 tsp. baking soda | | | | | |
Blend dry ingredients together. Cut in butter. Blend in buttermilk to form loose ball. Divide dough in half and press on floured board to 1/2" thick. Cut into 6 pie-shaped pieces. Brush with buttermilk and bake at 400 degrees for 10-12 minutes. |
1 cup chicken stock | | 1 Tbsp loose leaf Earl Grey tea | 1/4 cup heavy cream | | lemon juice | 2 tsp. sugar | | salt and pepper | | | |
Bring chicken stock to a boil, then steep the tea in it for 3 minutes. Boil cream with sugar over high heat until reduced by half. Strain chicken/tea liquid and add to cream. On low heat continue to reduce liquid, beating vigorously to produce a frothy texture. Add a few drops of lemon juice, then season with salt and pepper. This sauce is especially perfect over chicken or duck. |
